Sweet and Sour Carrots

Tested and tried, even changed a little in the Maine kitchen of Cher Jones

Have on hand, whole baby carrots, honey, wine vinegar, green pepper, cinnamon, ginger,
cloves, cardamon, salt, Marsala, chicken stock

Par-cook in stock, 1 1/4 baby whole carrots, scrub first if necessary. Drain.

Make sauce of 1/2 cup honey, 6 Tablespoons wine vinegar, 1/8 teaspoon each cinnamon,
ginger, cloves, cardamon, salt. Pour over carrots, adding 1cup slivered green pepper,
stir occasionally , before completed cooking add 1 1/2
Tablespoon Marsala wine.
