Green Bean Salad

Tested and tried, even changed a little in the Maine kitchen of Cher Jones

Have on hand 1&1/2 lbs. green beans, chicken broth, white wine, onion, olive oil, white
wine vinegar, sugar, clove garlic,rosemary, sage, pepper, parsley, sweet paprika.

Steam 11/2 whole greens beans in chicken broth, with 1/4 cup white wine, until barely
tender. Drain well.

Thinly slice 2 onions, and separate into rings. Toss gently. Marinate covered in
refrigerator with dressing below, for at least 1/2 a day, tossing occasionally .

1 cup olive oil
3/4 cup white wine vinegar
1 1/2 Tablespoon sugar
2 cloves crushed garlic
1/4 teaspoon rosemary
3/8 teaspoon sage
Salt and pepper to taste

Serve cold, sprinkled with fresh minced parsley, and a dusting of sweet paprika
